Ingredients (Makes 8–10 Polis)
For the Puran (Filling):
- Chana dal – 1 cup
- Jaggery (grated) – ¾ cup

- Whole wheat flour – 1½ cups
- Salt – a pinch
- Water – as needed

Step-by-Step Puran Poli Recipe
Step 1: Cook the Chana Dal
Wash and pressure cook chana dal until soft but not mushy. Drain excess water completely.
Mash or grind the dal to a smooth consistency.
Step 2: Prepare the Puran
Heat the mashed dal in a pan. Add jaggery and cook on low flame until it melts and blends evenly.
Stir continuously until the mixture thickens and leaves the sides of the pan.
Add cardamom and nutmeg powder. Let it cool and divide into equal portions.
Step 3: Knead the Dough
In a bowl, mix wheat flour and salt. Add Hari Keshri Oil and water to form a soft, elastic dough.
Cover and rest the dough for at least 20–30 minutes — this ensures soft polis.
Step 4: Assemble the Puran Poli
Take a dough ball, flatten slightly, place a portion of puran in the center, and seal gently.
Roll carefully into a thin disc using light pressure.
Step 5: Cook to Perfection
Heat a tawa on medium flame. Cook the poli, flipping gently.
Apply a little Hari Keshri Oil on both sides and roast until golden brown spots appear and the poli puffs slightly.
